California Salad

I’ve made this Spring salad and balsamic dressing three times this week!
Crispy spears of radicchio, sweet blueberries, crunchy snap peas, slices of tomatillo, grilled chicken, pumpkin seeds, and fresh cucumbers are the perfect combination for a Spring salad.

The flavors blend together seamlessly and we’ll have you opening that fridge door over and over again

A quick tip to prepping all your veggies is to pick a day to wash and cut them. Then when you feel
like making this delicious salad youll reach in the fridge, and grab veggies that are already to go! Cheers!

INGREDIENTS:

1 cup blueberries
1/2 cup pumpkin seeds
1 head of radicchio chopped
2 cups of grilled chicken cut into bite size pieces
2 cups pea pods chopped
1 avocado chopped
2 small cucumbers chopped and 1 sliced orange



SALAD DRESSING:


5 tablespoons of balsamic vinegar
1 cup EVOO
1 Himalayan teaspoon salt
Place all ingredients into an apothecary jar and shake well

METHOD:
Place all ingredients into a bowl, toss and enjoy!
