A wonderful salmon recipe with a great source of Omega-3 fatty acids.

Serves 4


  • 1/4 cup extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1/2 cup chopped fresh flat-leaf parsley
  • 2 scallions, finely sliced
  • 3 tbs chopped fresh mint leaves
  • 2 tbs capers, rinsed, drained & chopped
  • 1 tsp lemon zest
  • 1 tsp crushed red pepper flakes
  • salt & black pepper


  • 4-5 ounce center cut salmon fillets, each about 3-inches square
  • Salt and pepper

Salsa: Add the olive oil, lemon juice, parsley, scallions, mint, capers, lemon zest, and red pepper flakes. Toss lightly and season with salt and pepper, to taste. Set aside.

For the salmon: Season fish with salt & pepper. Cover the fish and bake for 25 minutes at 350 degrees. Transfer the salmon to a platter and allow to rest for 5 minutes. Enjoy
